Zucchini with Cheese

 

A quick sauté of vegetables with wonderful ,mild cheddar cheese and a sprinkling of parmesan, great flavors in an easy to-do dish.

You will need:

4 to 6 scrubbed zucchini, sliced, diced, or quartered
1/2 sliced onion (optional)
1/2 to 1 cup of mild cheddar cheese

parmesan cheese to taste
1/2 stick of butter
minced garlic (seven cloves)
salt, pepper to taste
crumbled thyme
season salt
1/2 cup sliced mushrooms

Heat the butter in a skillet until sizzling. Add the prepared zucchini. Cook until almost tender and remove. Put more butter in the pan. Add the minced garlic, onion and mushrooms. Cook until mushrooms have given off their liquid and are starting to limp. Put the zucchini back in the pan, arranging the mushrooms and onions all around the sides.

Add the seasonings and salt and pepper over all. Sprinkle the cheeses over the top and put the lid on. Remove from the heat. When the cheeses have melted, serve.
