Avocado Salsa

Of all the salsas you have tasted, of all the salsas ever made, this is the BEST! Lots of avocados, lots of taste, and lots and lots of requests for more!! Equally delicious as a dip with chips, as a topping for salmon, or as a salad dressing, this is very simple to prepare.

You will need:

8 avocados (don't be shy, make sure it is 8!) peeled and halved
2 cloves garlic, minced
1/2 red bell pepper, diced
1/2 green bell pepper, diced
Jalapenos to taste, chopped
6 Roma tomatoes, chopped
1 bunch cilantro, stems removed, chopped
1 green onion, 1/2 yellow and 1/2 red onions, chopped
salt and pepper to taste

Blenderize all but the avocados in a blender or food processor. Mix until everything is quite minced, but still chunky. Then add the chunks of avocados and mix in by hand. Sprinkle lemon juice over the top. Garnish with fluffy sprigs of cilantro and lemon slices. This is Great! Wrap tightly with plastic wrap and use as soon as possible.
