You will need:
2 to 3 pound pork butt
1/4 tsp curing salt
1 green pepper, cut to bite sizes
1 onion, cut to bite sizes
4 stalks celery, cut to bite sizes
3 tbsp sugar
1 tbls soy sauce
1/2 cup pineapple juice
1-2 tbsp vinegar
1 cup water
1/4 -1/3 cup ketchup
1 can pineapple (chunks)
oil for cooking (about 1/2 inch)
First prepare the meat. cut the pork into chunks about 3/4 inch squares. Mix the salt, sprinkling of salt, and the egg white with the cut meat. Add cracker meal and mix until the pork feels dry enough for deep frying. heat the oil until hot, add pork and fry 5-6 minutes, take out and drain.
Then prepare the vegetables. Heat a small amount of oil in a skillet. When hot, add the green pepper and sprinkle slightly with salt. Sauté for one or two minutes, or until a slight color change takes place. Remove from the skillet, and repeat with the onions and celery. Set these aside also.
Next prepare the sauce. In a skillet, combine the sugar, soy sauce, pineapple juice, vinegar, water and ketchup. Heat until the mixture begins to boil and the sugar has dissolved. Mix the cornstarch and water in a small cup to make a thin paste. Add a little at a time to the sauce until thickened as desired. Add the pineapple. Stir.
Combine the vegetables and fried pork with the thickened sauce, folding in gently. Cook 1-2 minutes to bind flavors. Serve with hot, white rice. So good!
