Homemade Applesauce

There are many recipes for applesauce.  Some are cooked over the stove, some in the microwave and some baked in the oven.  This one is easy to do as it is baked in the oven with little disruption except for the occasional stirring.  The aroma that wafts in the air will tantalize you! This is great with any pork dish, or with those succulent thick, pork chops. 

 

You will need:

 

8 pounds of apples
cinnamon to taste
sugar to taste
1/2 cup water
1/2 tsp vanilla

Peel, core, and chop apples. Put into a baking pan, add 1 1/2 tsp cinnamon, 1 1/2 cups of sugar (more or less according to taste), 1/4 tsp nutmeg. Bake for 45 minutes at 375 degrees or until the apples are very soft. Remove from the oven, stir, add vanilla and return. Continue to cook until all the liquid has been absorbed, and the apples are very tender and fragrant. Put into a large bowl, mix until well blended. Adjust sugar and spices.

This will result in a dark, spiced applesauce. Ladle into a clean quart jar and refrigerate. This is good enough to eat right out of the jar!
